The Challenge
When Square and Fair set out to launch their new food and coffee concept in Cardiff’s historic Morgan Arcade, they weren’t content with simply offering good coffee, they wanted to create one of the best café experiences in the city. With a menu centred on freshly baked focaccia sandwiches and a prime city-centre location, they expected significant footfall from day one. That meant one thing: the coffee setup needed to match their culinary ambitions—fast, consistent, high-quality, and capable of handling volume without compromise.
The Solution
Having worked with Nick Collins for years through his other ventures (Epic Caterers and Cleverchefs), we understood his high standards and his passion for premium hospitality.
With Square and Fair, Nick and his team were clear from the outset, they wanted equipment and coffee that would deliver both quality and speed, without cutting corners. Together, we helped them design and install a coffee setup built for performance.

Sanremo F18 Single Boiler – a workhorse espresso machine known for its consistency and output. Three Mahlkönig E65S GBW grinders – each dialled in for a different coffee to provide choice and precision. Anfim Luna grinder – dedicated to producing the perfect decaf, without compromise
We also supplied a curated selection of coffees to suit every palate: A rich, well-rounded house blend featuring coffees from Ethiopia and Costa Rica. Two distinctive single origins (Ethiopia and Peru) for the more adventurous. A smooth, high-quality decaf for those who want flavour without the caffeine. We delivered full barista training and calibration on-site, ensuring the team was confident from the start.
The Result
Square and Fair opened in June 2025 to instant buzz as one of Cardiff’s hottest new lunch spots. Thanks to their bold coffee setup, customers can now choose from four espresso options, something rarely seen in the city’s fast-casual market.
The investment in quality coffee and equipment has quickly paid off. The setup handles high volumes with ease while still delivering consistent, high-quality drinks. More importantly, it matches the ambition behind the food offering and the space itself—creating a true destination for Cardiff’s lunch and coffee crowd.
