When you’re working behind the bar, it’s not uncommon to get requests for coffee drinks that aren’t on your menu. Maybe it’s a traditional Italian order, a trendy customisation, or a regional favourite. Whatever the case, knowing how to make off-menu drinks shows confidence, professionalism, and gives your customers a more personal experience.

Traditional Macchiato
A classic Italian-style espresso with a touch of milk
Forget the large, milk-heavy versions—this is the real macchiato. A double shot of espresso is “marked” with just a spoonful or two of thick milk foam. It’s intense, short, and strong—perfect for customers who want a bold espresso with a softer edge.
Cortado
Balanced coffee with equal parts espresso and milk
Served in a 4oz glass, the cortado uses a double shot of espresso and an equal amount of steamed milk. It’s similar in style to a flat white but smaller, allowing the coffee flavour to shine through. Bonus points if you can top it off with a bit of latte art.
Piccolo Latte
A small latte made with a single shot
The piccolo is a mini latte—usually around 6oz—and made with a single shot of espresso. It’s great for customers who want a milk-based drink without too much caffeine or intensity. Think of it as a more delicate version of a flat white.
Dirty Chai Latte
A spicy chai latte with an espresso kick
This drink combines chai powder with a shot of espresso to create a rich, warming flavour. Start by mixing the chai with the espresso to form a paste, then add steamed milk and finish with a sprinkle of cinnamon. It’s a cosy, flavourful option that’s especially popular in the colder months.
Ristretto
A shorter, more concentrated espresso shot
A ristretto uses the same amount of ground coffee as a double espresso but yields less liquid—usually around 26–28g. It’s ground finer and brewed shorter, resulting in a richer, bolder flavour. Ideal for customers who love strong coffee without bitterness.
Babyccino
A foam-filled treat for kids (or non-coffee drinkers)
This one’s for the little ones. A babyccino is simply a cup of steamed milk foam, often served with a dusting of hot chocolate powder. It’s a lovely way to include kids in the coffee experience. Just be sure to check the temperature first.
