This coffee was processed using the honey process. Post-harvest processing influences the taste profile. Washed coffees are brighter, naturally processed are sweeter, wet hulled processed are nuttier and honey processed are somewhere in between.

Made with perfectly roasted Brazilian yellow catucai peaberries, this rare single origin coffee is something really special.

Grown on the Mió coffee farm in Monte Santo de Minas, surrounded by wildflower pastures and native forest, this unique coffee is honey processed to bring out its chocolaty sweetness and a delicious green apple tang.

Coffee production in harmony with nature

Spanning over 1,500 hectares, the Mió coffee farm is two thirds coffee trees and native forest and one third pasture and eucalyptus trees, home to thousands of bees. With growing terrain spanning Southern Minas Gerais and the High Mogiana region, the farm produces coffee over two distinct terrains, one bringing a citric acidity, the other a full body and sweetness that combine perfectly to create the foundations of Mió’s unique taste.

Expertly processed to create a unique finish

The plump coffee cherries grown on Mió farm are red honey processed, with the beans partially depulped at the wet mill before drying. Keeping the sticky, sugary part of the cherry intact through the drying process results in a pronounced body and distinctive chocolaty sweetness, plus perfect beans that roast evenly and consistently every single time.
